Taiwanese Style Dan Dan Noodles
Ingredients
- 4 cloves garlic, grated
- 2 tablespoons chili flakes
- 1 tablespoon sesame seeds
- 2 teaspoons ground Sichuan pepper
- 4 tablespoons vegetable oil
- 4 tablespoons soy sauce
- 2 tablespoons dark brown sugar
- 1.5 tablespoons peanut butter or sesame paste
- 2 teaspoons black vinegar
- 180 grams noodles per bowl
- 1/4 cup noodle cooking water per bowl
- bok choy
- vegan protein
- crushed peanuts
- scallions
Preparation
Grate the garlic and mix all spicy sauce ingredients together in a bowl.
Heat the vegetable oil in a pan over medium heat, add chili flakes, ground Sichuan pepper, and sesame seeds, and cook until fragrant, about 1-2 minutes.
Combine the heated oil mixture with the remaining sauce ingredients and stir well to create the spicy sauce.
Cook the noodles according to package instructions until al dente, reserving 1/4 cup of the cooking water.
For each bowl, mix 180 grams of cooked noodles with 4-5 tablespoons of spicy sauce and the reserved noodle cooking water to achieve a creamy consistency.
Top with blanched bok choy, vegan protein, crushed peanuts, and sliced scallions. Serve immediately.
