Vegan Dan Dan Noodles
Ingredients
Spicy sauce
- 4 cloves garlic, grated
- 2 tablespoons chili flakes
- 1 tablespoon sesame seeds
- 2 teaspoons ground Sichuan pepper
- 4 tablespoons vegetable oil
- 4 tablespoons soy sauce
- 2 tablespoons dark brown sugar
- 1.5 tablespoons peanut butter or sesame paste
- 2 teaspoons black vinegar
Noodle components
- 180 grams noodles
- 4-5 tablespoons spicy sauce
- 1/4 cup noodle cooking water
- bok choy
- vegan protein
- crushed peanuts
- scallions
Preparation
Heat the vegetable oil in a pan over medium heat.
Add grated garlic, chili flakes, sesame seeds, and ground Sichuan pepper; cook until fragrant.
Stir in soy sauce, dark brown sugar, peanut butter or sesame paste, and black vinegar to complete the spicy sauce.
Cook noodles according to package instructions and drain, reserving 1/4 cup of cooking water.
For each bowl, mix the cooked noodles with 4-5 tablespoons of spicy sauce and the reserved noodle cooking water.
Top with bok choy, vegan protein, crushed peanuts, and scallions as desired.
Notes
This recipe serves two and is a vegan Taiwanese adaptation of Sichuan Dan Dan Noodles.
Adjust the amount of chili flakes for preferred spiciness level.
