This Bowl of Red Lentil Stew

Ingredients

  • 1 cup red lentils
  • 1-15oz can fire roasted diced tomatoes
  • 3 cloves garlic minced
  • 1 inch ginger minced
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/4 tsp turmeric
  • 1 bay leaf
  • 1/2 tsp trader joe’s mushroom umami seasoning
  • 2 1/2 cup vegetable broth ?

Preparation

  1. In a large sauce pan add in rinsed lentils, garlic and ginger and cook on low heat until fragrant

  2. Add in tomatoes and remaining herbs and spices, cook for about 3 minutes

  3. Add in veggie broth and bay leaf then bring to a boil then reduce to a simmer

  4. Cover pan and allow mixture to cook and thicken for 30 minutes, stirring on occasion

  5. Serve with some rice, avocado and cilantro

  6. This was so good
