Tofu Scramble Stuffed Sweet Potatoes

Ingredients

  • 4-6 small sweet potatoes
  • 1 package of your favorite vegan sausages
  • 1 box firm tofu
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon black salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • Pinch turmeric

Preparation

  1. Heat oven to 400 degrees. Scrub the sweet potatoes and bake for 40 minutes or until easily pierced with a fork. Set aside.

  2. Heat a large skillet over medium heat.

  3. Slice the vegan sausage into coins.

  4. Add an optional splash of olive oil to the skillet and sauté the sausages until they start to crisp on the edges.

  5. Drain the tofu and crumble it into the skillet with the sausage.

  6. Add all remaining ingredients to the skillet and combine well using a spatula.

  7. Cook over medium heat until heated through.

  8. Serve the mixture in the baked sweet potatoes with your favorite veggies on the side.
