Traditional Rajasthani Gunda Methi Vegetable Dish

Ingredients

  • 300 g Gunda
  • 1/2 cup soaked Fenugreek Seeds
  • Water as required
  • 2 tsp Coriander Powder
  • 2 tsp Red Chilli Powder
  • 1 tsp Turmeric Powder
  • 2 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • 1 tsp Fennel Seeds
  • 1 tsp Onion Seeds
  • 1/2 grated Raw Mango

Preparation

  1. Add Gunda to hot water and cook until it boils

  2. Strain the water and let it cool down

  3. Take about 1/2 cup water and cook Methi Dana until it boils, then turn off the heat

  4. Cut the Gunda into two pieces and remove the seeds

  5. Place the Gunda in a mixing bowl

  6. Add 2 teaspoons of coriander powder

  7. Add 2 teaspoons of red chilli powder

  8. Add 1 teaspoon of turmeric powder

  9. Mix well to coat the masala

  10. Heat 2 tablespoons of oil in a pan

  11. Add mustard seeds, cumin seeds, fennel seeds, and onion seeds, using 1 teaspoon each

  12. Add half of a grated raw mango

  13. Fry well and then add the Gunda mixture

  14. Add the boiled Methi along with its water

  15. Cover and cook on medium heat for 10 minutes

  16. Turn off the heat when the masalas are well mixed

Tips

  1. Gunda is a seasonal ingredient, available only in certain times, so use it when in season

  2. Serve with Indian breads such as roti, paratha, or puri for a complete meal
