Traditional Rajasthani Gunda Methi Vegetable Dish
Ingredients
- 300 g Gunda
- 1/2 cup soaked Fenugreek Seeds
- Water as required
- 2 tsp Coriander Powder
- 2 tsp Red Chilli Powder
- 1 tsp Turmeric Powder
- 2 tbsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 1 tsp Fennel Seeds
- 1 tsp Onion Seeds
- 1/2 grated Raw Mango
Preparation
Add Gunda to hot water and cook until it boils
Strain the water and let it cool down
Take about 1/2 cup water and cook Methi Dana until it boils, then turn off the heat
Cut the Gunda into two pieces and remove the seeds
Place the Gunda in a mixing bowl
Add 2 teaspoons of coriander powder
Add 2 teaspoons of red chilli powder
Add 1 teaspoon of turmeric powder
Mix well to coat the masala
Heat 2 tablespoons of oil in a pan
Add mustard seeds, cumin seeds, fennel seeds, and onion seeds, using 1 teaspoon each
Add half of a grated raw mango
Fry well and then add the Gunda mixture
Add the boiled Methi along with its water
Cover and cook on medium heat for 10 minutes
Turn off the heat when the masalas are well mixed
Tips
Gunda is a seasonal ingredient, available only in certain times, so use it when in season
Serve with Indian breads such as roti, paratha, or puri for a complete meal
