Vegan Buddha Bowl with Sweet Potato
Ingredients
- 1 cup prepared Lundberg Organic Brown Long Grain Rice
- 1 purple sweet potato
- Baby romaine
- Baby spring greens
- Arugula
- Orange and yellow carrots
- Broccoli
- Radish sprouts
- Tahini dressing
Preparation
Preheat oven to 200°C and bake the purple sweet potato for 45 minutes or until tender.
In a pan, sauté the orange and yellow carrots and broccoli with oil until tender.
If not already prepared, cook the brown rice according to package instructions.
Wash the greens: baby romaine, baby spring greens, arugula, and radish sprouts.
Assemble all ingredients in a bowl, layering as desired.
Drizzle with tahini dressing and serve.
