Vegan Buddha Bowl with Sweet Potato

Ingredients

  • 1 cup prepared Lundberg Organic Brown Long Grain Rice
  • 1 purple sweet potato
  • Baby romaine
  • Baby spring greens
  • Arugula
  • Orange and yellow carrots
  • Broccoli
  • Radish sprouts
  • Tahini dressing

Preparation

  1. Preheat oven to 200°C and bake the purple sweet potato for 45 minutes or until tender.

  2. In a pan, sauté the orange and yellow carrots and broccoli with oil until tender.

  3. If not already prepared, cook the brown rice according to package instructions.

  4. Wash the greens: baby romaine, baby spring greens, arugula, and radish sprouts.

  5. Assemble all ingredients in a bowl, layering as desired.

  6. Drizzle with tahini dressing and serve.
