Vegan Orange Tofu Stir-Fry

Ingredients

  • 1 block tofu, patted dry and cubed (about 400g)
  • 2 tbsp cornstarch (16g)
  • 1 cup orange juice (240ml)
  • 1 small piece ginger, grated (about 10g)
  • 2 garlic cloves, grated (about 5g)
  • 3 stalks green onion, white and green parts separated
  • 1 tbsp rice vinegar (15ml)
  • 1 tbsp maple syrup (15ml)
  • 2 tbsp soy sauce (30ml)
  • 1 tbsp dark soy sauce (15ml)
  • 1 tbsp cornstarch (8g)
  • 1 tbsp water (15ml)

For serving

  • Steamed broccoli
  • Cooked rice
  • Sesame seeds

Preparation

  1. Toss the tofu cubes with salt, cornstarch, and a drizzle of olive oil. Air fry at 200°C (390°F) for 20 minutes, flipping halfway through.

  2. In a pan, sauté the grated garlic and ginger in sesame oil for 30 seconds.

  3. Add the orange juice, rice vinegar, brown sugar, soy sauces, and the cornstarch mixed with water. Simmer over medium heat for 4-5 minutes until slightly thickened.

  4. Reduce the heat to low, add the crispy tofu, and simmer for 1-2 minutes to coat.

  5. Serve over steamed rice, garnish with sesame seeds and green onion greens, and pair with broccoli.
