Chewy Gluten-Free Peanut Butter Cookies
Ingredients
- 1 1/4 C @santacruzorganic natural peanut butter (no sugar added)
- 3/4 C @wholesomesweet coconut sugar (or brown sugar)
- 1 TBSP @simplyorganicfoods Madagascar Vanilla (my fav vanilla extract)
- 1/3 C @addjoi almond milk
- 1/4 tsp salt
- 1 C @bobsredmill gluten free 1:1 flour (or oat flour or all purpose)
- 1 tsp baking soda
Preparation
Preheat oven to 350 degrees.
Add all wet ingredients to a bowl and use a mixer to combine.
Add in dry ingredients and mix on low speed until fully combined. Dough will be quite sticky.
Roll into balls and place on parchment lined baking sheets. Use a fork dipped in warm water to press each cookie down with a cross hatch pattern.
Bake for 7-8 minutes until super soft and chewy. Cookies may look puffy and undercooked, but they will be perfect.
Remove from oven and let rest on baking sheets for a few minutes.
Tips
Optionally, press a chocolate star or kiss into the center to make peanut butter blossoms.
