Date-Filled Ma'amoul Cookies
Ingredients
- 1/2 cup all-purpose flour
- 2 teaspoons baking powder
- a small pinch of salt
- 1 cup softened butter
- 1/2 cup powdered sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup date paste
Preparation
Preheat the oven to 180 degrees Celsius, set the middle rack, and prepare shallow baking sheets.
On parchment paper, sift the flour, baking powder, and salt and set aside.
In the mixer bowl, place the butter and sugar, attach the whisk attachment, beat for a minute, add egg yolks and vanilla, and beat until light in color.
Add the flour, attach the paddle attachment, and mix for 1-2 minutes until a cohesive dough forms.
Divide the dough into small balls, make a cavity in each ball like kibbeh, place a piece of date paste inside, shape into a ball, put in a ma'amoul mold, press to take the mold's shape, and flip the mold to release the piece.
Place the ma'amoul pieces on the baking sheets with space between them.
Bake the sheets in the oven for 12 minutes until golden brown, and let the ma'amoul cool completely in the pans.
