Easy Gluten-Free Cranberry Bars

Ingredients

  • 3 cups gluten-free flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp ground cinnamon
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1/4 cup milk
  • 2 tsp vanilla extract

Filling

  • 4 cups fresh cranberries
  • 3/4 cup sugar
  • 1 tbsp cornstarch
  • 2 tsp orange zest
  • 1 tbsp orange juice

Icing

  • 1 tbsp orange juice
  • 1/2 cup confectioners' sugar

Preparation

  1. Preheat oven to 350 and line a 9x13 pan with parchment.

  2. Whisk flour, sugar, baking powder, salt and cinnamon in large bowl.

  3. Cut cold butter into the mixture with a pastry cutter or fork until crumbly, which takes about 5 minutes.

  4. Whisk egg, milk, vanilla in small bowl, pour over flour mixture and mix together until it resembles sand.

  5. Pour and flatten 4 cups of mixture into bottom of pan and press down to make the bottom layer.

  6. Mix all the cranberry filling ingredients together.

  7. Pour filling over pressed down dough.

  8. Sprinkle remaining dough over mixture.

  9. Bake for 45 minutes until top is lightly brown and toothpick comes out mostly clean.

Tips

  1. Add chocolate chips on top if desired.

  2. Let rest to room temperature.

  3. Mix up the quick icing and drizzle it on top if you want.

  4. Store in fridge.
