Gluten-Free Cookies with Coconut Sugar

Ingredients

  • 1/2 cup almond flour
  • 1/2 cup rice flour
  • 1 tbsp coconut sugar
  • 1 1/2 tbsp cacao powder
  • 1 tsp baking powder
  • 1 tbsp coconut oil
  • pinch of salt
  • 1/4 cup vegetable milk
  • 2 egg whites (vegan substitute: 2 tbsp ground flaxseed + 3 tbsp water)

Preparation

  1. Knead the mixture into a dough; it may be sticky, so use hands to knead properly.

  2. Divide the dough into approximately 13 small scoops and shape them as desired.

  3. Transfer the shaped cookies to an oven tray and bake at 180°C for 20 minutes.
