Homemade Crunchy Almond Cookies
Ingredients
- 150g butter
- 120g fine sugar
- 1 egg
- 1/2 teaspoon vanilla essence
- 150g flour
- 100g custard powder
- 75g corn flour
- 60g almond powder
Decoration
- 1 egg yolk with a little yellow food coloring
- Almond nibs or almond strips
Preparation
Mix butter and sugar until white and creamy
Add egg and vanilla essence; mix until fluffy and well combined
Gradually add the sifted ingredients and almond powder
Knead the dough; if too soft, add a little flour
Shape the dough using a mold as desired
Decorate with the egg yolk mixture and sprinkle with almonds
Bake at 170°C for 15-20 minutes
Tips
For crunchier cookies, bake at a lower temperature like 160°C and increase baking time slightly
