Homemade Crunchy Almond Cookies

Ingredients

  • 150g butter
  • 120g fine sugar
  • 1 egg
  • 1/2 teaspoon vanilla essence
  • 150g flour
  • 100g custard powder
  • 75g corn flour
  • 60g almond powder

Decoration

  • 1 egg yolk with a little yellow food coloring
  • Almond nibs or almond strips

Preparation

  1. Mix butter and sugar until white and creamy

  2. Add egg and vanilla essence; mix until fluffy and well combined

  3. Gradually add the sifted ingredients and almond powder

  4. Knead the dough; if too soft, add a little flour

  5. Shape the dough using a mold as desired

  6. Decorate with the egg yolk mixture and sprinkle with almonds

  7. Bake at 170°C for 15-20 minutes

Tips

  1. For crunchier cookies, bake at a lower temperature like 160°C and increase baking time slightly
