Simple Vegan Chickpea Cookie Dough

Ingredients

  • 1 can chickpeas rinsed
  • 1/4 cup maple syrup
  • 1/2 cup almond butter (peanut butter works too)
  • 1 tsp vanilla paste (or extract)
  • 2 tbsp almond milk or milk of choice
  • 1/2 cup dark chocolate chips (I used a bar and cut it into chunks)

Preparation

  1. Add all ingredients except milk and chocolate chips to a food processor and blitz until smooth and thick.

  2. Slowly add in milk depending on the consistency you want.

  3. Stir in chocolate chips.

  4. Enjoy!
