Vegan Peanut Butter and Jelly Drops
Ingredients
Cookie dough
- 1/2 cup almond meal
- 1/3 cup oats
- 1/2 cup peanut butter
- 2 tbsp coconut oil
- 1 tbsp maple syrup
- 1/4 tsp baking powder
- 1/2 tsp vanilla extract
Chia jam
- 1/2 cup berries
- 1 tbsp chia seeds
- 1 tbsp berry powder (optional)
- 1 tbsp maple syrup
Preparation
Mix the cookie dough ingredients in a bowl.
Form the mixture into balls, flatten them, and use your thumb to press in the middle.
Bake in the oven at 180°C for 15 minutes or until golden, then allow to cool.
Meanwhile, mash the berries with a fork, then stir in the chia jam ingredients in a small pot over low heat until desired consistency is reached.
Use a spoon to add the chia jam into the thumbprint of the cookies.
Notes
Berries have high antioxidant capacities and can improve memory; enjoy them raw or frozen for maximal nutritional benefits and select organic to avoid pesticides.
