Vegan Peanut Butter and Jelly Drops

Ingredients

Cookie dough

  • 1/2 cup almond meal
  • 1/3 cup oats
  • 1/2 cup peanut butter
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1/4 tsp baking powder
  • 1/2 tsp vanilla extract

Chia jam

  • 1/2 cup berries
  • 1 tbsp chia seeds
  • 1 tbsp berry powder (optional)
  • 1 tbsp maple syrup

Preparation

  1. Mix the cookie dough ingredients in a bowl.

  2. Form the mixture into balls, flatten them, and use your thumb to press in the middle.

  3. Bake in the oven at 180°C for 15 minutes or until golden, then allow to cool.

  4. Meanwhile, mash the berries with a fork, then stir in the chia jam ingredients in a small pot over low heat until desired consistency is reached.

  5. Use a spoon to add the chia jam into the thumbprint of the cookies.

Notes

  1. Berries have high antioxidant capacities and can improve memory; enjoy them raw or frozen for maximal nutritional benefits and select organic to avoid pesticides.
