Traditional Brazilian Custard-Filled Fried Doughnuts

Ingredients

  • 3 fresh yeast cakes (45g total)
  • 1 teaspoon salt
  • 4 tablespoons sugar
  • 2 tablespoons butter
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 2 cups warm water
  • 8 cups all-purpose flour
  • vegetable oil
  • 1 cup powdered sugar

Filling

  • 1 liter milk
  • 4 egg yolks
  • 2 cups sugar
  • 1 cup all-purpose flour
  • 2 tablespoons vanilla extract

Preparation

  1. In a bowl, mix the yeast, salt, and sugar

  2. Add the butter, vanilla extract, eggs, and water and mix well

  3. Gradually add the flour, kneading until it comes off the hands

  4. Shape 20 balls with the dough and let rise for 20 minutes

  5. Fry a few doughnuts at a time in hot oil for 10 minutes or until golden brown

  6. Remove and drain on paper towels

Filling

  1. In a saucepan, combine the milk, egg yolks, sugar, flour, and vanilla extract and mix well

  2. Cook over medium heat, stirring constantly, for 10 minutes or until thickened

  3. Remove from heat and let cool, stirring occasionally

Assembly

  1. Cut the doughnuts in half horizontally and fill with the custard

  2. Dust with powdered sugar and serve
