Almond Biscuits with Honey Topping

Ingredients

Dough

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup soft butter
  • 1 1/3 cups powdered sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract

Top layer

  • 1 large egg white
  • 1/2 cup whole almonds
  • 1/4 cup honey
  • 1/2 cup syrup

Preparation

  1. Sift the flour and baking powder onto a piece of parchment paper or into a deep bowl and set aside.

  2. In the mixer bowl, place the butter and sugar, attach the mixing beater, and run on medium speed until the mixture is creamy and light in color.

  3. Add the vanilla and egg yolks, and mix until incorporated.

  4. Add the flour mixture and mix until a soft, cohesive dough forms.

  5. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for one hour.

  6. Ten minutes before shaping, remove the dough from the refrigerator and let it come to room temperature.

  7. Preheat the oven to 180°C, prepare shallow-rimmed baking sheets, and get a medium-sized decorative cookie cutter.

  8. Cut the dough into biscuits using the cookie cutter and place them spaced apart on the baking sheets.

  9. For the top layer, place the almonds in a thick plastic bag and crush them using a mortar and pestle or a meat mallet.

  10. Brush the biscuits with a little egg white using a small brush, then sprinkle with the crushed almonds.

  11. Bake the biscuits for 8-10 minutes until the bottom is golden brown.

  12. In a small bowl, combine the honey and syrup, stir to mix, and using a small brush, spread the mixture over the warm biscuits to allow them to absorb the flavor.

  13. Let the biscuits cool completely before serving.
