Arabic Style Pistachio Ghribah Cookies

Ingredients

  • 1 and 1/3 cups melted ghee
  • 1/4 cup corn oil
  • 1 cup powdered sugar
  • 2.5 cups flour
  • 1/2 cup very fine ground pistachio

For decoration

  • whole pistachios

Preparation

  1. Set the oven rack in the middle and preheat the oven to 180°C.

  2. Prepare short-edged trays by lining them with parchment paper.

  3. In a mixer bowl, combine melted ghee, corn oil, and powdered sugar. Use the beater attachment and mix on medium speed for 3 to 4 minutes until the mixture is light in color. Add flour and fine pistachio, then mix until a smooth and slightly soft dough forms.

  4. Take a walnut-sized piece of dough, shape it into a smooth ball, dip one end in whole pistachios, and place it on the prepared tray. Repeat with the remaining dough, leaving a small space between each ball.

  5. Bake for 8 to 10 minutes until the bottom is golden brown. Allow the cookies to cool completely before serving.
