Banana Bread Granola

Ingredients

  • 5 cups gluten-free rolled oats
  • 1 cup chopped walnuts
  • 1 1/2 teaspoon cinnamon/cardamom
  • 3 bananas
  • 1/4 cup tahini (or nut butter of choice)
  • 1/4 cup maple syrup

Preparation

  1. Preheat oven to 180°C

  2. Mix dry ingredients: oats, walnuts, and cinnamon/cardamom in a large bowl

  3. Mash bananas and mix with tahini and maple syrup in another bowl

  4. Combine wet and dry mixtures until evenly coated

  5. Spread the mixture evenly on a baking sheet

  6. Bake for 20-30 minutes, stirring halfway through, until golden and crispy

  7. Allow to cool completely before serving or storing
