Chocolaty Banana Nut Oat Muffins
Ingredients
- 4 tbsp Ground flaxseed
- 1/4 cup water
- 2 cups oats, old fashioned
- 1 cup walnuts
- 1 tsp cinnamon
- 1 tsp allspice
- 1 pinch of salt
- 1 cup Apple sauce
- 1 tsp baking powder
- 1/4 cup maple syrup
- 2 medium bananas
- 2-3 tbsp cocoa powder
Preparation
Preheat oven to 350° F and prepare flax egg by mixing 4 tbsp flaxseed meal with 1/4 cup water.
Add oats and walnuts to food processor and process for 2-3 minutes until it looks like course flour.
Add everything else besides the cocoa powder and process until a “dough” forms.
Take half of the mixture and place it in a bowl with the cocoa powder. Mix well until batter turns chocolaty.
Add chocolate mixture to muffin tin. Fill each one about half way and then fill the rest with the regular batter.
Add big walnut pieces and cinnamon powder to the top. Bake for 25-30 minutes.
