Basbousa with Chocolate Filling
Ingredients
- 1 cup fine semolina
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/8 teaspoon baking soda
- 1/8 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup yogurt
- 1/2 cup corn oil
Filling
- 1 cup milk
- 2 tablespoons cornstarch
- 2 tablespoons flour
- 150 grams chocolate
For serving
- Syrup
- Finely ground pistachios
Preparation
Adjust the rack to the middle of the oven and preheat the oven to 180°C.
Prepare a 9-inch round pan by greasing it with butter and flouring it.
In a mixer bowl, place semolina, sugar, baking powder, baking soda, salt, eggs, vanilla, yogurt, and oil, attach the paddle, and mix on medium speed until well combined and a thick batter forms.
Pour half of the batter into the pan and pour the remaining batter into a deep dish, then set it aside.
Place the pan in the oven for 10 minutes only until the surface sets, but do not let it cook completely, then remove and place on the kitchen counter.
For the filling, in a medium heavy-bottomed saucepan, place milk, cornstarch, and flour, stir with a whisk until mixed, then place on medium heat and stir with a wooden spoon until it boils and thickens, add chocolate pieces and stir until melted.
Spread the filling over the basbousa layer in the pan, pour the remaining batter on top, and smooth to cover completely.
Place in the oven for 20 to 25 minutes until golden brown.
Remove from the oven and pour one cup of syrup over it, let it cool for a few minutes, then invert onto a serving plate.
Pour more syrup over the basbousa and garnish with pistachios.
