Chocolate Peanut Butter Balls

Ingredients

  • 1 cup smooth peanut butter
  • 1/4 cup and 1 tablespoon rice malt syrup
  • 1 scoop or 30g unflavored protein powder
  • 1/4 cup cacao

Chocolate coating

  • 50g to 60g vegan chocolate chips
  • 1 teaspoon coconut oil

Preparation

  1. If your peanut butter is thick for mixing, heat it in a heat-proof bowl over boiling water for a few minutes.

  2. Mix all ingredients together in a large bowl until fully combined.

  3. Roll into small bite-sized balls and place on a tray lined with baking paper.

  4. Refrigerate the balls while preparing the chocolate.

  5. Melt the chocolate chips and coconut oil in a heat-proof bowl over boiling water.

  6. Remove the balls from the refrigerator.

  7. Dip each ball into the chocolate, coat evenly, and drain excess chocolate using a fork.

  8. Place the coated balls back on the tray with baking paper and refrigerate.

  9. Optionally, top with crushed peanuts immediately after coating to ensure they stick.

  1. Peanuts are a healthy, low FODMAP, high-protein vegan option rich in monounsaturated fats, vitamin E, niacin, folate, protein, and manganese, which promote heart health.
