Cinnamon Roll Mug Cake

Ingredients

Dough

  • 4 tbsp spelt flour or regular flour
  • 1 3/4 tbsp unsweetened almond milk
  • Pinch of salt
  • Pinch of cinnamon
  • 1/2 tsp brown sugar (optional)
  • 1/2 tsp baking powder

Filling

  • 1 tsp maple syrup or vegan butter
  • 2 tsp brown sugar
  • Pinch of cinnamon
  • Pinch of salt

Glaze

  • 1 tbsp powdered sugar
  • splash of almond milk

Preparation

  1. In a bowl, add flour, cinnamon, baking powder, salt, and sugar and mix well.

  2. Add in milk and mix together with a fork until a dough starts to form.

  3. Knead dough with hands for about 1-2 minutes.

  4. If dough is dry, add a small splash of milk. If too wet, add a pinch of flour until less sticky.

  5. Knead for 1 minute and allow dough to rest for a minute.

  6. Transfer dough to a lightly floured surface and flatten into a rectangle with hands.

  7. Spread maple syrup or vegan butter lightly over the dough surface.

  8. Sprinkle brown sugar and cinnamon over top and spread evenly with a spoon.

  9. Starting from the short end, roll the dough tightly to form a log.

  10. Cut the log into 4 even pieces.

  11. Place the cinnamon roll pieces in a shallow mug, allowing space between them.

  12. Place mug in the microwave and cook for 1 minute.

  13. After first 30 seconds, open microwave door to rest for a second, then close and cook for remaining 30 seconds.

  14. Allow to rest for a few seconds, and if not done, cook for additional 15 seconds.

  15. Once cooked, top with icing and enjoy immediately.

  16. Note: If left sitting, the mug cake may harden.

  17. For glaze: Mix 1 tbsp powdered sugar with a splash of almond milk until desired consistency.
