Cinnamon Roll Mug Cake
Ingredients
Dough
- 4 tbsp spelt flour or regular flour
- 1 3/4 tbsp unsweetened almond milk
- Pinch of salt
- Pinch of cinnamon
- 1/2 tsp brown sugar (optional)
- 1/2 tsp baking powder
Filling
- 1 tsp maple syrup or vegan butter
- 2 tsp brown sugar
- Pinch of cinnamon
- Pinch of salt
Glaze
- 1 tbsp powdered sugar
- splash of almond milk
Preparation
In a bowl, add flour, cinnamon, baking powder, salt, and sugar and mix well.
Add in milk and mix together with a fork until a dough starts to form.
Knead dough with hands for about 1-2 minutes.
If dough is dry, add a small splash of milk. If too wet, add a pinch of flour until less sticky.
Knead for 1 minute and allow dough to rest for a minute.
Transfer dough to a lightly floured surface and flatten into a rectangle with hands.
Spread maple syrup or vegan butter lightly over the dough surface.
Sprinkle brown sugar and cinnamon over top and spread evenly with a spoon.
Starting from the short end, roll the dough tightly to form a log.
Cut the log into 4 even pieces.
Place the cinnamon roll pieces in a shallow mug, allowing space between them.
Place mug in the microwave and cook for 1 minute.
After first 30 seconds, open microwave door to rest for a second, then close and cook for remaining 30 seconds.
Allow to rest for a few seconds, and if not done, cook for additional 15 seconds.
Once cooked, top with icing and enjoy immediately.
Note: If left sitting, the mug cake may harden.
For glaze: Mix 1 tbsp powdered sugar with a splash of almond milk until desired consistency.
