Creamy Coconut Oats for Healthy Breakfast

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp coconut flakes
  • 1 tbsp ground flax seed
  • 1/2 tsp cinnamon
  • 3/4 cup almond milk
  • 1/4 cup full fat coconut milk
  • Pinch of salt
  • 1 banana

Preparation

  1. Optionally chop the oats in a mini food processor for a creamier texture.

  2. Mash or slice the banana as desired.

  3. Add all ingredients to a saucepan and bring to a simmer.

  4. Stir and cook for about 3 minutes until creamy, then remove from heat.

  5. Top as desired with fruits and nuts such as persimmons, blackberries, pumpkin seeds, blueberries, and cocoa nibs.
