Creamy Coconut Oats

Ingredients

  • 1/3 cup rolled oats (I’ve been chopping my oats up in a mini food processor before cooking them...pretty much making my own quick oats which makes them much creamier)
  • 1 tbsp coconut flakes
  • 1 tbsp ground flax seed
  • 1/2 tsp cinnamon
  • 3/4 cup almond milk
  • 1/4 cup full fat coconut milk
  • Pinch of salt
  • 1 banana, mashed or sliced

Preparation

  1. Add all ingredients to a sauce pan and then bring to a simmer

  2. Stir and cook for about 3 minutes until it’s creamy and remove from stove top

  3. Top as desired

  4. I chose this super ripe Kent mango, Blueberries, coconut and passion fruit
