Dark Chocolate S’mores Pudding Cake

Ingredients

Chocolate cake

  • 1 cup (135g) all-purpose flour
  • 1/2 cup (114g) granulated sugar
  • 1/4 cup (44g) dark brown sugar
  • 6 tbsp dutch-processed cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp instant espresso powder
  • 1/2 tsp salt
  • 1/2 cup non-dairy milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1 cup mini marshmallows
  • Graham crackers, for dipping

Pudding

  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tbsp dutch processed cocoa powder
  • 3/4 cup boiling water

Preparation

  1. Preheat oven to 350F and grease a 10″ oven-safe skillet. Set aside.

  2. In a large mixing bowl, whisk together flour, sugars, cocoa powder, baking powder, espresso powder, and salt.

  3. In a separate bowl, combine the milk, vegetable oil, and vanilla. Pour the wet ingredients into the dry ingredients and stir to combine. Pour the batter into the skillet and spread into an even layer.

  4. In a medium mixing bowl, combine the sugars and cocoa powder until no clumps remain.

  5. Sprinkle the sugar mixture on top of the cake batter in an even layer. Pour the boiling water on top. It should completely submerge the sugar mixture.

  6. Bake for 20 minutes. Quickly remove from oven and top with mini marshmallows. Bake for 5 minutes more.

  7. Allow the cake to cool for about 10 minutes. Then serve with graham crackers and optionally ice cream.
