Date and Coconut Energy Balls

Ingredients

  • 12 pitted dates
  • A handful of mixed nuts (hazelnuts, almonds, cashews)
  • Grated coconut

Preparation

  1. Soak the dates in hot water for 30 minutes.

  2. Drain the dates and blend them.

  3. Add the mix of nuts and blend until a paste forms.

  4. Let the paste sit in the fridge or freezer, then form little balls and roll them in grated coconut.

  5. Refrigerate the balls for at least two hours before eating to allow them to solidify.
