No-Bake Cinnamon Energy Balls
Ingredients
- 1 cup pitted dates
- 1 cup raw natural cashews
- 2 TBS chia seeds
- 2 TBS coconut oil
- 1 TBS maple syrup
- 1 TBS cinnamon
- 1-2 TBS water (if needed)
- 1 cup quinoa puffs
Preparation
Add dates and cashews in food processor and process until it resembles coarse sand.
Add chia seeds, coconut oil, maple syrup, cinnamon and process until dough forms. If dough doesn't come together add the water at this step. Dough should stick together when you press it between your fingers.
Pulse in quinoa puffs.
Form 20-24 balls, place them on parchment paper lined plate, freeze them for at least 1 hour and then enjoy.
