Delicious Fudgy Sweet Potato Brownies

Ingredients

  • 3/4 cup sweet potato
  • 1/3 cup brown rice syrup
  • 1/3 cup coconut oil
  • 1/3 cup Natvia living sugar
  • 3/4 cup flour
  • 1/4 Macro Mike chocolate protein
  • 1/3 cup cacao powder
  • chocolate chunks (optional)

Preparation

  1. Preheat oven to 180°C.

  2. Peel and chop one small sweet potato and steam until soft.

  3. Mash up sweet potato and add remaining ingredients except chocolate chunks.

  4. Blend in a food processor until you get a smooth blend.

  5. Stir through chocolate chunks or any other add-ins.

  6. Pour into a lined baking tin and bake in the oven for 30 minutes.

  7. Leave in the pan and cool for 15 minutes before putting in the fridge.
