Easy Choc-Nut Miso Bars

Ingredients

  • 2 cups peanut butter
  • 1 tbsp miso paste
  • 3/4 cup almond milk
  • 1/2 cup maple syrup
  • 1 cup vegan dark chocolate chips

Preparation

  1. Line a small square pan with baking or wax paper

  2. In a saucepan over very low heat, melt peanut butter, miso, maple syrup, and almond milk until smooth, no longer than 5 minutes

  3. Pour the mixture into the pan and smooth the top, then place in the freezer to set for an hour; once set, remove from freezer

  4. Melt the chocolate in the microwave, stirring at intervals until smooth

  5. Pour the chocolate over the peanut butter mixture and smooth out

  6. Chill before cutting into squares

  7. Keep frozen and enjoy

Notes

  1. Miso is high in sodium but may not affect the cardiovascular system like other high-sodium foods; studies suggest it lowers risk of cardiovascular problems.

  2. Miso contains antioxidants and microorganisms that aid digestion by breaking down proteins, carbohydrates, and fats.
