Healthy Chocolate Cookies with Pumpkin

Ingredients

  • 1 cup of coconut flour
  • 1/2 cup of oatmeal flour
  • 1/2 cup of coconut oil
  • 1 cup of cacao powder
  • pinch of sea salt
  • 3/4 cup of organic maple syrup
  • 1 tablespoon of vanilla essence
  • 1 cup pumpkin mashed
  • dark chocolate chips

Preparation

  1. Preheat oven to 180°C

  2. In a bowl, mix together the dry ingredients: coconut flour, oatmeal flour, cacao powder, and sea salt

  3. In another bowl, combine the wet ingredients: coconut oil, organic maple syrup, vanilla essence, and pumpkin mash

  4. Gradually add the wet mixture to the dry ingredients and stir until well combined

  5. Fold in the dark chocolate chips

  6. Form the mixture into cookie shapes and place them on a baking sheet

  7. Bake for 10-15 minutes or until golden brown
