Healthier Magic Cookie Bars

Ingredients

Crust

  • 2 tbsp coconut flour
  • 1/2 cup almond flour
  • 2 tbsp green banana flour (sub with gluten free flour of choice)
  • 2 tbsp coconut sugar
  • 2 tbsp maple syrup
  • 3 tbsp coconut oil

Layers

  • 1/2 cup full fat coconut milk
  • 1/2 tbsp maple syrup
  • 1/4 cup extra dark chocolate chips (used Pascha chocolate with no added sugars)
  • 1/3 cup nuts of choice (e.g., chopped raw cashews, pecans, walnuts)
  • 1/4 cup shredded coconut
  • 1 tsp sea salt
  • 1 tbsp cacao powder (optional)

Preparation

  1. Mix all the crust ingredients in a bowl until a sticky dough forms.

  2. Press the dough firmly into a glass baking dish.

  3. Mix the coconut milk with maple syrup.

  4. Pour and spread the mixture over the crust.

  5. Add a layer of nuts.

  6. Add a layer of chocolate chips.

  7. Add a layer of shredded coconut.

  8. Sprinkle sea salt and cacao powder on top.

  9. Bake at 350 degrees Fahrenheit for 15-20 minutes.

  10. Allow the bars to cool, then refrigerate to harden and firm together.
