Healthier Magic Cookie Bars
Ingredients
Crust
- 2 tbsp coconut flour
- 1/2 cup almond flour
- 2 tbsp green banana flour (sub with gluten free flour of choice)
- 2 tbsp coconut sugar
- 2 tbsp maple syrup
- 3 tbsp coconut oil
Layers
- 1/2 cup full fat coconut milk
- 1/2 tbsp maple syrup
- 1/4 cup extra dark chocolate chips (used Pascha chocolate with no added sugars)
- 1/3 cup nuts of choice (e.g., chopped raw cashews, pecans, walnuts)
- 1/4 cup shredded coconut
- 1 tsp sea salt
- 1 tbsp cacao powder (optional)
Preparation
Mix all the crust ingredients in a bowl until a sticky dough forms.
Press the dough firmly into a glass baking dish.
Mix the coconut milk with maple syrup.
Pour and spread the mixture over the crust.
Add a layer of nuts.
Add a layer of chocolate chips.
Add a layer of shredded coconut.
Sprinkle sea salt and cacao powder on top.
Bake at 350 degrees Fahrenheit for 15-20 minutes.
Allow the bars to cool, then refrigerate to harden and firm together.
