Healthy Homemade Twix Bars

Ingredients

Cookie layer

  • 1 cup almond flour
  • 1/8 cup coconut sugar
  • 1/4 cup coconut oil
  • 1 tbsp maple syrup

Caramel layer

  • 1 cup Medjool dates
  • 2 tbsp peanut butter
  • 1 tsp vanilla extract

Chocolate covering

  • 85% dark chocolate slab

Preparation

  1. Preheat the oven to 180°C.

  2. Mix all the ingredients for the cookie layer.

  3. Firmly press the mixture into a lined baking tray.

  4. Bake for 15-20 minutes until golden, then set aside to cool.

  5. Soak the pitted Medjool dates in hot water for 10 minutes

  6. Drain the dates and blend them in a food processor with peanut butter and vanilla extract until smooth.

  7. Spread the caramel mixture evenly over the cooled cookie layer.

  8. Melt the dark chocolate.

  9. Drizzle the melted chocolate over the bars.

  10. Chill in the refrigerator or freezer for at least one hour to set.
