Healthy Vegan Cinnamon Buns
Ingredients
Dough
- 250g spelt flour, sweetener of choice (I used vanilla flavor drops + 25g rice syrup)
- pinch of salt
- 25-50ml rapeseed oil or vegan margarine
- 100ml warm plant milk
- 1/2 cube fresh yeast
Filling
- 3 tbsp cinnamon
- 2 tbsp coconut sugar or regular
- 1 tbsp rapeseed oil or 2 tbsp apple sauce
Preparation
Dissolve yeast in milk
Mix flour and salt
Add flavor drops and rice syrup to yeast mixture (and/or add about 50g coconut sugar to the flour)
Pour the yeast-milk and the oil to the dry ingredients
Knead until it's a dough
Let rest for 30 minutes in a warm place
Mix filling ingredients together
Knead the dough one more time, roll out to a square, spread filling, roll up, cut in slices, put the rolls on a baking sheet or in a baking form, let the dough rise for 15-30 minutes again (optional)
Bake at 180°C (350°F) upper lower heat for about 10-30 minutes (depending on size and oven), they should be slightly brown, make sure to not overbake them as they will get more dry after baking
For frosting, mix some soy curd with sweetener and spread it over the buns
