Homemade Butterfly Pea Tapioca Pearls
Ingredients
- 90g tapioca starch
- 3 tbsp (37g) sugar of choice
- 60g water (1/4 cup)
- 1/4 to 1/2 tsp butterfly pea flower powder
Preparation
Place tapioca starch and butterfly pea flower powder into a bowl and set aside.
Bring water and sugar to a boil, ensuring the water is hot to form the mixture properly.
Add 1 tablespoon of the tapioca and butterfly pea powder mixture and stir until well combined and no lumps.
Quickly stir the hot mixture into the remaining tapioca and butterfly pea mixture using chopsticks and mix well.
Transfer the dough to a lightly tapioca-floured surface and knead until it becomes uniform, soft, and elastic, adding more tapioca starch if needed.
Roll out the dough into a square shape, cut into small cubes, and roll each into a ball, then lightly dust the balls with tapioca flour.
In a medium pot, boil enough water to cover the tapioca balls.
Add the tapioca balls to the boiling water and stir to prevent sticking.
Let boil until the tapioca balls float to the top.
Reduce the heat to low, cover with a lid, and simmer for 15 minutes.
Turn off the heat, keep the lid on, and let sit for 10 minutes.
Drain the tapioca pearls and add 2 tablespoons of sugar to prevent sticking.
Add them to your favorite milk tea or coffee and serve.
Tips
Use cane sugar or your preferred sugar for best results.
Butterfly pea flower powder naturally colors the pearls blue.
