Matcha Banana Walnut Muffins
Ingredients
- 2 cups flour
- 1 tbsp matcha powder
- 3 mashed bananas
- 1/2 cup crushed walnuts
- 1/4 cup coconut oil
- 1/4 cup almond milk
- 1/2 cup agave
- 2 tbsp vanilla
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- A pinch of salt
Preparation
Preheat oven to 375°F
In a large bowl, mix together the dry ingredients: flour, matcha powder, cinnamon, baking soda, baking powder, and salt
In another bowl, combine the wet ingredients: mashed bananas, coconut oil, almond milk, agave, and vanilla
Add the wet mixture to the dry mixture and stir until just combined, then fold in the crushed walnuts
Spoon the batter into muffin cups or a greased muffin tin
Bake for 20-25 minutes or until a toothpick inserted comes out clean
