Naturally Sweet Salted Caramel Nut Bars
Ingredients
Base
- 3/4 cups walnuts
- 3/4 cup macadamia nuts
- 2 cups almond flour
- 1 tablespoon almond butter
- 3 tablespoons melted coconut oil
- 2 tablespoons coconut syrup
- 1 tablespoon date syrup
- Good pinch of Himalayan pink salt
Salted caramel layer
- 1 cup organic pitted Medjool dates
- 1 cup organic dried apricots
- 1/2 cup macadamia milk
- 1/2 cup evaporated coconut milk
- 1/4 cup filtered water
- 3 tablespoons melted coconut oil
- Big pinch of salt
Chocolate coating
- 1 1/4 cups raw cacao powder
- 2/3 cup melted coconut oil
- 2 tablespoons maple syrup
Preparation
Blend the walnuts and macadamia nuts until you have a crumb-like texture. Pour into a large bowl and then add all the other ingredients and mix evenly. Press into a lined loose-bottomed 8 inch square tin. Place in the freezer while you make the salted caramel.
Place all the ingredients in a blender and process until smooth. Pour onto chilled base and spread evenly. Sprinkle some halved hazelnuts onto the surface of the salted caramel layer and gently press into surface slightly. Freeze for 4 hours.
Whisk all ingredients together until smooth. Take salted caramel slab out of the freezer. Cut into bars and quickly drizzle the chocolate coating over the bars. The chocolate will set quite quickly. Place the bars back in the freezer for a couple of hours until bars are nicely set. Enjoy.
