No-Bake Peppermint Cookie Dough Bars
Ingredients
- 1 1/3 cup almond flour
- 1/3 cup coconut oil, melted
- 3 tbsp milk of choice
- 3 tbsp maple syrup
- 1 tsp peppermint extract
- 1 tsp vanilla extract
- 1/3 cup mini chocolate chips
- 1/4 cup crushed candy cane
Frosting
- 1/3 cup white chocolate (or coco butter), melted
- crushed candy cane
Preparation
Line a bread pan with parchment paper.
Mix together wet ingredients (coconut oil, milk, maple syrup), then mix in almond flour. Finally, add in chocolate chips and candy canes.
Spread dough evenly on bottom of bread pan. Freeze for 1 hour.
Pour melted chocolate (or coco butter) evenly over top, sprinkle candy canes and freeze for 10-15 minutes, or until chocolate hardens.
Cut into 10 or more bars and enjoy.
