Nona Manis Steamed Cake
Ingredients
First mixture
- 1 egg
- 80 grams granulated sugar
- 250 ml thick coconut milk
- 140 grams all-purpose flour
Second mixture
- 250 ml coconut milk blended with pandan leaves
- 40 grams granulated sugar
- 30 grams cornstarch
- a pinch of salt
Third mixture
- 300 ml thick coconut milk
- 2 tablespoons granulated sugar
- 3 tablespoons all-purpose flour
- 1 tablespoon cornstarch
- a pinch of salt
Preparation
Beat the eggs and sugar until fluffy. Reduce the mixer speed, add the flour, and mix until smooth. Then pour in the thick coconut milk and mix again until well combined.
For the second mixture, combine all ingredients. Cook on the stove over medium heat, stirring continuously, until it starts to bubble. Remove from heat.
Combine the first and second mixtures using a mixer until evenly blended. Set aside. Meanwhile, heat the steamer.
For the third mixture, mix all ingredients together until smooth and free of lumps. Cook while stirring continuously to prevent the coconut milk from curdling. Do not cook for too long. Once it boils, immediately remove from heat and continue stirring to avoid lumps.
Prepare the molds by lightly greasing them with oil. Pour the green batter into the molds up to three-quarters full. Then, using a piping bag, add the white batter in the center and press it slightly to keep it from spreading. Repeat until all batter is used.
Steam for approximately 7 to 10 minutes, adjusting the time based on the size of the molds. Perform a skewer test if unsure of doneness.
