Pandan Layered Glutinous Rice Cake

Ingredients

Glutinous rice layer

  • 1.5 cups glutinous rice
  • 1.5 cups coconut milk
  • salt
  • 1 tablespoon cooking oil

Pandan custard layer

  • 0.5 cup all-purpose flour
  • 2 tablespoons custard powder
  • 1 cup pandan juice
  • 1 cup thick coconut milk
  • 0.5 cup sugar
  • 1 egg
  • salt

Preparation

  1. Mix all glutinous rice layer ingredients together and steam for 30 minutes, then press down to compact.

  2. Blend all pandan layer ingredients until smooth, cook briefly on the stove until thickened while stirring constantly, and pour over the compacted glutinous rice layer.

  3. Steam again for an additional 30 minutes until fully set and done.
