Strawberry Mini Cheesecake

Ingredients

Crust

  • 1 cup graham cracker crumbles (about 1 sleeve)
  • 3 tbsp melted butter

Filling

  • 8 oz cream cheese
  • 1/3 cup plain Greek yogurt
  • 1/4 cup sugar
  • 1 egg
  • 3/4 tsp vanilla

Strawberry Sauce

  • 1 lb strawberries (sliced)
  • 3-6 tbsp sugar (depending on desired sweetness)
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla

Preparation

  1. Line all slots of a muffin tin (silicone muffin liners preferred) & preheat oven to 350°F.

  2. Combine crust ingredients, then press down 1 1/2 tbsp into each muffin cup. Bake for 6-8 minutes.

  3. Cream together filling ingredients (cream cheese, sugar, yogurt first and then add the rest).

  4. Add 1 1/2-2 tbsp filling into each cup. Bake for 18-20 minutes. Let cool completely (30 minutes), then refrigerate for 4 hours or overnight.

  5. For the strawberry sauce, bring all ingredients to a mild boil, mixing occasionally. Simmer 10-12 minutes until the sauce begins to thicken. Let cool completely, then refrigerate.
