Strawberry Mini Cheesecake
Ingredients
Crust
- 1 cup graham cracker crumbles (about 1 sleeve)
- 3 tbsp melted butter
Filling
- 8 oz cream cheese
- 1/3 cup plain Greek yogurt
- 1/4 cup sugar
- 1 egg
- 3/4 tsp vanilla
Strawberry Sauce
- 1 lb strawberries (sliced)
- 3-6 tbsp sugar (depending on desired sweetness)
- 1 tbsp lemon juice
- 1/2 tsp vanilla
Preparation
Line all slots of a muffin tin (silicone muffin liners preferred) & preheat oven to 350°F.
Combine crust ingredients, then press down 1 1/2 tbsp into each muffin cup. Bake for 6-8 minutes.
Cream together filling ingredients (cream cheese, sugar, yogurt first and then add the rest).
Add 1 1/2-2 tbsp filling into each cup. Bake for 18-20 minutes. Let cool completely (30 minutes), then refrigerate for 4 hours or overnight.
For the strawberry sauce, bring all ingredients to a mild boil, mixing occasionally. Simmer 10-12 minutes until the sauce begins to thicken. Let cool completely, then refrigerate.
