Mini Cheesecake with Biscuit Base

Ingredients

Base

  • 3 cups Marie biscuits
  • 1/2 cup butter

Cheesecake filling

  • 250 grams cream cheese
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 tablespoon lemon juice
  • 1 1/2 tablespoons all-purpose flour

Preparation

  1. Pour the melted butter into the finely ground Marie biscuits and mix until well combined.

  2. Spoon the mixture into paper cups and press down to compact.

  3. Chill in the freezer for a short while.

  4. Beat the cream cheese and sugar together.

  5. Add the eggs and beat well.

  6. Add the lemon juice and flour, and mix thoroughly.

  7. Spoon the mixture over the prepared biscuit base.

  8. Bake at 160°C for 16 minutes.

  9. Decorate with optional toppings.
