Pistachio Tiramisu Delight
Ingredients
- 240 g cream cheese at room temperature
- 200 g butter or pistachio cream
- 2 medium eggs
- 60 g sugar
- 1 large cup of strong coffee
- 200 g cookies
- 1 shot of rum (optional)
Preparation
Prepare the coffee and mix it with a teaspoon of pistachio cream then set aside
Beat the cream cheese with the rest of the pistachio cream until smooth
Separate the egg whites from the yolks
Beat the yolks with the sugar over a double boiler until creamy and smooth
Whip the egg whites to stiff peaks
Incorporate the beaten yolks into the cream cheese mixture and mix well then add the egg whites with folding motions to maintain the airy texture
Dip the cookies in the coffee and assemble the first layer in your mold then cover with half of the cream and repeat the process for the layers
Refrigerate for 3 to 4 hours or overnight
