Easy No-Bake Italian Tiramisu
Ingredients
- 2-3 tsp instant coffee granules
- 250ml boiling water
- 3 medium eggs
- 4 tbsp granulated sugar
- 250g mascarpone
- 24 sponge fingers
- Flake or Twirl to decorate
Substitutions
- 300ml double cream (to replace eggs and mascarpone for allergies)
Preparation
Dissolve coffee granules in 250ml of boiling water, using 2 tsp for a weak taste or 3 tsp for strong, and leave to one side.
Separate egg whites from yolks and place them in two separate bowls, then whisk the egg whites with a hand mixer until stiff peaks form.
Whisk the egg yolks, adding 1 tablespoon of sugar at a time until all 4 tablespoons are incorporated and the mixture is creamy, then slowly add the mascarpone and whisk until smooth.
Gently fold the egg whites into the mascarpone mixture using a folding motion to preserve air, or if using the egg-free alternative, whisk 300ml double cream with 4 tablespoons of sugar until smooth.
Choose a dish for layering, dip sponge fingers in the coffee solution, place a layer in the bottom, add some mascarpone or whipped cream mixture on top, and continue layering until all ingredients are used, finishing with crumbled Flake or Twirl bar.
Tips
Best served chilled for 3-4 hours or overnight to enhance flavor and texture, making it ideal for preparing in advance.
