Vegan Banana Coconut Macaroons
Ingredients
- 2 Bananas
- 1 1/4 cups / 125g Desiccated coconut
- 3.5oz / 100g Dark or Raw chocolate
Preparation
Peel and mash the very ripe bananas.
Mix in the coconut with the mashed bananas, using your hands if easiest.
Spoon a heaped tablespoon of the mixture and roll into a ball then flatten.
Baking method
Bake at 350F or 180C for about 15 minutes until they start to go golden.
Raw dehydrating method
Dehydrate for 6 hours at 110F, then flip and dehydrate for 4 more hours.
Finishing
Leave to cool while melting the chocolate.
Melt the chocolate using a microwave or double boiler
Dip into the chocolate then place on greaseproof paper to cool.
