Vegan Banana Coconut Macaroons

Ingredients

  • 2 Bananas
  • 1 1/4 cups / 125g Desiccated coconut
  • 3.5oz / 100g Dark or Raw chocolate

Preparation

  1. Peel and mash the very ripe bananas.

  2. Mix in the coconut with the mashed bananas, using your hands if easiest.

  3. Spoon a heaped tablespoon of the mixture and roll into a ball then flatten.

Baking method

  1. Bake at 350F or 180C for about 15 minutes until they start to go golden.

Raw dehydrating method

  1. Dehydrate for 6 hours at 110F, then flip and dehydrate for 4 more hours.

Finishing

  1. Leave to cool while melting the chocolate.

  2. Melt the chocolate using a microwave or double boiler

  3. Dip into the chocolate then place on greaseproof paper to cool.
