Vegan French Toast with Caramelized Peaches and Bananas
Ingredients
- 1 super ripe banana
- 1/4 cup chickpea flour
- 1 cup oat milk
- 1 heaping tablespoon nutritional yeast
- splash of vanilla
- pinch of salt
- dense bread slices (as needed)
Toppings
- 1 teaspoon coconut oil
- 1 peach, sliced
- 1 banana, sliced into coins
- fresh blueberries
Preparation
Blend together the banana, chickpea flour, oat milk, nutritional yeast, vanilla, and salt to make the batter.
Pour the batter into a shallow dish and place dense bread slices in to soak for a couple of minutes on each side.
In a large pan over medium heat, cook the soaked bread slices for 5-6 minutes on each side until browned.
In another pan over medium heat, heat 1 teaspoon of coconut oil and fry sliced peach and banana coins until caramelized and browned.
Serve the French toast topped with caramelized fruits and fresh blueberries.
