Vegan French Toast with Caramelized Peaches and Bananas

Ingredients

  • 1 super ripe banana
  • 1/4 cup chickpea flour
  • 1 cup oat milk
  • 1 heaping tablespoon nutritional yeast
  • splash of vanilla
  • pinch of salt
  • dense bread slices (as needed)

Toppings

  • 1 teaspoon coconut oil
  • 1 peach, sliced
  • 1 banana, sliced into coins
  • fresh blueberries

Preparation

  1. Blend together the banana, chickpea flour, oat milk, nutritional yeast, vanilla, and salt to make the batter.

  2. Pour the batter into a shallow dish and place dense bread slices in to soak for a couple of minutes on each side.

  3. In a large pan over medium heat, cook the soaked bread slices for 5-6 minutes on each side until browned.

  4. In another pan over medium heat, heat 1 teaspoon of coconut oil and fry sliced peach and banana coins until caramelized and browned.

  5. Serve the French toast topped with caramelized fruits and fresh blueberries.
