Sweet Cinnamon French Toast

Ingredients

  • 4-5 slices seeded sourdough bread
  • 80g chickpea flour
  • 2 tbsp nutritional yeast
  • 1 tsp cinnamon
  • 1 tbsp ground chia or flax seeds
  • 200ml plant milk
  • 100ml aquafaba
  • 1 medium banana
  • 1/2 tsp black salt

Preparation

  1. Blend everything together in your food processor or blender then let batter rest for a few minutes to soak up the liquid.

  2. Using a clean plate pour some of the batter into the plate then pop a slice of bread on top, pour more batter over the top and allow a couple of minutes for the batter to soak into the bread.

  3. Using a lightly oiled nonstick pan on a medium heat place the bread in the oil and cook for 3-4 minutes, turn over and repeat.
