Game Day Salad with Pomegranate and Tahini Dressing

Ingredients

  • 2 red apples, chopped
  • 2-3 stalks of celery, chopped
  • 1 cup of pomegranate seeds
  • 1/2 cup of organic raisins (or use grapes)

Dressing

  • 2 tbsp of tahini (or raw cashews soaked and drained)
  • 1/2 zucchini
  • juice of 1 lemon
  • dash of Himalayan salt (optional)

Preparation

  1. Blend the dressing ingredients until smooth.

  2. Combine all salad ingredients in a bowl.

  3. Add the blended dressing to the salad and mix well.

  4. Serve and enjoy.
