Blueberry Vanilla Overnight Oats

Ingredients

  • 1 cup rolled oats
  • 2 scoops vanilla plant-based collagen boost creamer
  • 1/2 tsp ground cinnamon
  • 2 cups almond milk or oat milk
  • 4 tbsp chia seeds
  • 1 cup fresh or frozen berries (thawed)

Preparation

  1. Set the oats aside in a separate bowl.

  2. In a blender, combine all the remaining ingredients.

  3. Blend until you see the berries broken down.

  4. Add the liquid mixture to the oats, stir, and put in a closed container to sit overnight.

Tips

  1. Top with fresh fruits such as nectarine, fig, blueberry jam, and plant-based yogurt for extra flavor.

  2. Blending chia seeds helps them break down, making them easier to digest and less likely to stick in teeth.
