Persimmon Overnight Oats with Cardamom

Ingredients

  • 1/2 cup rolled oats
  • 1 Tablespoon chia seeds
  • 3/4 cup non dairy milk
  • 1/8 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • Small handful pecans, about 2 tablespoons
  • 1/2-1 fresh persimmon

Preparation

  1. Mix the rolled oats, chia seeds, milk and spices well in a 16oz. jar or bowl.

  2. Wait 10-20 minutes or overnight for oats and chia to absorb the milk.

  3. Wash, peel and slice persimmon.

  4. Add pecans and sliced persimmon to your jar and enjoy.

Tips

  1. Make a few at a time as a grab and go breakfast for busy winter mornings.

  2. Persimmons can be pricey, so buy them when reasonably priced and use in various dishes.
