Rhubarb Strawberry Chia Seed Jam

Ingredients

  • 2 cups chopped rhubarb
  • 2 cups sliced strawberries
  • 2-3 tablespoons Lakanto or maple syrup
  • Juice of 1/2 lemon
  • 2 tablespoons chia seeds

Preparation

  1. Place rhubarb and strawberries in a pot over medium heat.

  2. Add lemon juice.

  3. Once the mixture starts to break down, add the sweetener.

  4. Continue to cook over medium-low to low heat for another 10 minutes or until the rhubarb is fully broken down.

  5. Add the chia seeds.

  6. Check for sweetness and add more sweetener if desired.
