Rhubarb Strawberry Chia Seed Jam
Ingredients
- 2 cups chopped rhubarb
- 2 cups sliced strawberries
- 2-3 tablespoons Lakanto or maple syrup
- Juice of 1/2 lemon
- 2 tablespoons chia seeds
Preparation
Place rhubarb and strawberries in a pot over medium heat.
Add lemon juice.
Once the mixture starts to break down, add the sweetener.
Continue to cook over medium-low to low heat for another 10 minutes or until the rhubarb is fully broken down.
Add the chia seeds.
Check for sweetness and add more sweetener if desired.
